For me, it's as much about the larger art as it is about the extras you get in the package. I have the first two LoEG editions because they come with Alan Moore's scripts, but didn't pick up the third volume nor the V for Vendetta or Prometheus ones because the descriptions did not indicate there was anything added to them (though JH Williams art in this format is enticing). I would also add my voice to the praise for JLA/Avengers. Perez's art looks fabulous in this oversized format, and the compendium is amazing, especially for a "Crisis child" such as myself, who had been waiting for that book for two decades. If you can find it, get it.
I agree with @Gargoyle on the Sandman books as well. I have the first two and I love all the extra stuff in those tomes, including original Gaiman scripts. Great stuff!
Crisis on Infinite Earth. One of the few times the material warrants and matches the treatment. I would love to see JLA vsAvengers but that is a hard catch.
Let's reverse the question. Are there any absolutes that should be avoided?
League of Extraordinary Gentlemen: the Black Dossier. $99 but without anything extra at all. Get the TPB for $20 (no doubt you could find it discounted) and don't get scammed by DC. This really was a horrible decision on their part.
I agree on Long Halloween and Hush. And I don't know if this totally fits into this category but I really like my HC of New York Drawings by Adrian Tomine.

1. Crisis on Infinite Earths (Perez art at its largest format, really pays off)
2. JLA/Avengers (See reason for #1). Find it people!
3. New Frontier
also like
4. Watchmen (this one is not as necessary, Moore's story is the driver here, so I like my smaller TPB for frequent readings)
I always keep an eye out for Long Halloween and Hush cause I'd like to add them, but havent yet.
I also have All-Star Superman enroute to me, we'll see if it was worth upgrading from the HCs.

Sandmans too - including the Death volume. (OT - I'm not at all pumped for the new upcoming Sandman though and I don't know why.)

I'd like to get JLA/Avengers and Crisis as well at some point.
